Chef Jan's Festive Pavlova Recipe
INGREDIENTS
4 egg whites
2 tablespoons corn flour
2 teaspoons vinegar
1 cup caster sugar
2 teaspoons vanilla paste
Pinch of salt
METHOD
- In a very clean bowl, beat egg whites until soft peaks form
- Slowly add your sugar
- Add vinegar, vanilla and salt
- Carefully fold in your corn flour
- Place the mixture on a greased tray and cook in the oven at 150 degrees for 1.5 hours
- Turn off your oven, and leave in there overnight to dry out.
- Decorate with a dolloping of cream, fresh berries, passionfruit and mint. Enjoy!
CHEF TIP
Leave your eggs out overnight so they are room temperature – this helps them to whip better.
