Chef Jan's Orange Panna Cotta Recipe with ABC Radio
Ingredients
Panna Cotta
100 g sugar
250 mL pouring cream
1 tablespoon vanilla paste
3 sheets of gelatine (20 g pack)
500 g sheep’s milk yoghurt
Chocolate Ganache
250 g sheep’s milk yoghurt
Cocoa powder (to serve)
Method
Panna cotta
- Zest oranges into pot, add in sugar, pouring cream, vanilla paste and mix over low heat until sugar dissolves.
- Bloom gelatine in water: put gelatine in cold water — keep in your hand while it dissolves. When soft and runny, transfer to your warm cream and mix well.w
- Fold in yoghurt, mix well.
- Pour into serving glasses or piping bag to set in the fridge over night.
- Serve simply on its own, or dress it up with the following if you want a totally decadent experience: orange spice-infused marmalade, orange blossom Persian fairy floss, and an orange infused ganache (follow method below).
Chocolate ganache
- Melt chocolate in a stainless steel bowl over a simmering pot of hot water.
- Once the chocolate is melted, fold it through the sheep’s yoghurt and whisk well.
- Pour mixture into a piping bag and allow to set.
- Once set, pipe onto a dessert plate and sprinkle with dark cocoa powder.
