Chef Jan's Festive Pavlova Recipe


4 egg whites

2 tablespoons corn flour

2 teaspoons vinegar

1 cup caster sugar

2 teaspoons vanilla paste

Pinch of salt


  1. In a very clean bowl, beat egg whites until soft peaks form
  2. Slowly add your sugar
  3. Add vinegar, vanilla and salt
  4. Carefully fold in your corn flour
  5. Place the mixture on a greased tray and cook in the oven at 150 degrees for 1.5 hours
  6. Turn off your oven, and leave in there overnight to dry out.
  7. Decorate with a dolloping of cream, fresh berries, passionfruit and mint. Enjoy!



Leave your eggs out overnight so they are room temperature – this helps them to whip better.
